It shows up in the simpler dishes too. The Beef and Black Bean Stir Fry is bold and savoury because the beef can hold its own against big flavours rather than disappearing into them. And the Beef Ravioli? Silky pasta, tender filling, proper comfort food. A personal chef treats vegetables with the same seriousness as protein. They know that a sweet potato roasted properly is a completely different thing to one that isn't. The Burnt Butter and Sage Chicken pasta uses it differently, as a soft counterpoint to the nuttiness of the butter, and it works beautifully.

The Thai Lemongrass Chicken with Broccoli and Coconut Rice is the opposite in style but equally considered, clean and bright and aromatic in a way that makes you forget you're eating something that's also good for you.
Our Chicken Tikka Masala is warm and complex and exactly what a proper tikka should be. And the Marry Me Chicken with Penne Pasta, playful name aside, is genuinely hard to stop eating. Sun-dried tomatoes, herbs, a spice blend that somehow makes everything sing together.
